Tasting notes

The wine is ruby red, with flecks of garnet. The bouquet is fruit-driven, with aromas of cherries, pomegranate and fruits of the forest, plus cocoa, leather and caramel. The palate is elegant and complex. Hugely concentrated, the tannins are at the same time firm and persistent.

Pairings

Our Cerasusolo di Vittoria DOCG is wonderful with pasta or risotto made with mushrooms and juniper berries, and also with flavoursome seafood dishes, such as tuna with onions and cherry tomatoes, or fish soup.

Why we like it

Our Sabuci Cerasuolo di Vittoria Classico DOCG is made from a selection of the best Nero d’Avola grapes (about 70%) and Frappato (about 30%). Sabuci celebrates the ancient roots of wine in Sicily, in fact, the Frappato is fermented in terracotta 7 hl amphorae, while the Nero d’Avola is fermented in open barriques, with frequent pumping over. The natural porosity of the terracotta allows the ideal exchange of oxygen throughout fermentation and we maintain skin contact for around 12 months. The wines are then blended and aged for six months in a mixture of barriques and barrels of various sizes, after which the wine rests in the bottle for a further three months. This wine takes its name from our “contrada” or hamlet and encompasses all of our philosophy and values in terms of terroir and natural products.
